I normally try to avoid baking…if I bake it I eat it.Â
Our house is generally a cake free zone due…. to my lack of self control!
But with Kindy back in full swing I decided to whip up a cake a la Martha Stewart style
. I was so pleased with (myself) the result that I thought I would share the recipe with you.
BANANA,COCONUT & MACADAMIA CAKE
INGREDIENTS
4x Overripe bananas
2x Eggs
1 tsp Heilala Vanilla extract
30g Butter melted
1 and half cups wholemeal self raising flour
2 tbs Jalna pot set coconut yogurt (can add more depending how coconut you want it)
Half cup of brown sugar
1 tsp Cinnamon
2 tbs honey
Macadamia nuts handful (can opt out or use walnuts)
METHOD
Step 1:Preheat oven to 180/170 if fan forced. Spray a deep loaf pan with spray oil. Line with baking paper.
Step 2: Sift Flour into a large bowl. Stir in sugar. Make a well in the centre and mix in remaining ingredients.Stir until just combined.
Step 4: Pour into tin. Bake for 30-35 minutes. Transfer to wire rack to cool.
Step 5: Serve with butter a cup of tea and your favourite magazine.
